IN THE KITCHEN!!!! This Weekend Sunday's Signature Lobster Egg Rolls
Yield: 8 egg rolls
Prep Time: 30 minutes
Cook Time: 8–10 minutes
Ingredients
Filling
1 lb cooked lobster meat, chopped into bite-sized pieces
4 oz cream cheese, softened
1 cup shredded mozzarella cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup green onions, thinly sliced
1/4 cup red bell pepper, finely diced
2 tbsp celery, finely diced
2 cloves garlic, minced
1 tbsp butter
1 tsp Old Bay seasoning
1/2 tsp smoked paprika
1/2 tsp onion powder
1/4 tsp cayenne pepper (optional)
1 tsp fresh lemon juice
Salt and black pepper to taste
Egg Rolls
8 egg roll wrappers
1 egg, beaten (for sealing)
Vegetable oil for frying
Garlic Butter Drizzle
4 tbsp butter
2 cloves garlic, minced
1 tsp fresh parsley, chopped
1 tsp lemon juice
Signature Cajun Aioli
1/2 cup mayonnaise
2 tbsp sour cream
1 tbsp Dijon mustard
1 tsp Cajun seasoning
1 tsp lemon juice
1 tsp hot sauce
1/2 tsp garlic powder
Instructions
1. Melt the butter in a skillet over medium heat. Sauté the celery, bell pepper, and garlic for 2–3 minutes until tender.
2. Stir in the Old Bay, paprika, onion powder, cayenne, and lemon juice.
3. Remove from the heat and gently fold in the lobster, cream cheese, mozzarella, Monterey Jack, and green onions. Allow the mixture to cool.
4. Place an egg roll wrapper in a diamond position. Spoon about 1/3 cup of filling near the bottom corner.
5. Fold the bottom corner over the filling, fold in the sides, roll tightly, and seal the edge with beaten egg.
6. Heat oil to 350°F (175°C) and fry the egg rolls for 3–4 minutes per side, or until golden brown and crispy.
7. Drain on paper towels.
Garlic Butter
Melt the butter, add the garlic, and cook for 1 minute. Stir in the parsley and lemon juice. Brush or drizzle over the hot egg rolls just before serving.
Cajun Aioli
Whisk together the mayonnaise, sour cream, Dijon mustard, Cajun seasoning, lemon juice, hot sauce, and garlic powder until smooth. Chill for at least 15 minutes before serving.
Serving Suggestion
Serve the lobster egg rolls hot with the Cajun aioli for dipping and a light drizzle of garlic butter. Garnish with chopped parsley, sliced green onions, and a lemon wedge.

This letter serves as my formal Notice of Intent to Sue Siegel Suites and any responsible parties arising from your company's failure to address repeated reports of harassment, stalking, retaliation, and threats to my safety while I was a resident at your Fremont location.
On Thursday, July 23, 2026, I was unexpectedly approached by a former Siegel Suites staff member against whom I previously filed multiple complaints during my tenancy. This contact was unwanted, uninvited, and unwelcome.
Given the history between the parties, I reasonably perceived this encounter as continuing harassment and intimidation. After relocating from your property approximately six months ago, I should not continue experiencing contact from individuals connected to the matters I previously reported.
Rather than resolving the concerns I repeatedly raised, this new incident reinforces my belief that the harassment has continued beyond my tenancy and validates the safety concerns documented throughout my prior correspondence.
Timeline of Documented Concerns
December 27, 2025
Initial complaints regarding ongoing disturbances, fear for personal safety, and requests for management intervention.
January 4, 2026
Submitted video evidence alleging stalking and threatening conduct by another resident and notified management that a police report would be filed.
January 5, 2026
Reported repeated harassment and advised management that I intended to pursue legal action if the situation remained unresolved.
Served Siegel Suites with a formal Notice of Intent to Sue alleging negligence, failure to protect, harassment, stalking, and emotional distress.
January 8–10, 2026
Sent numerous written complaints documenting:
harassment and intimidation;
alleged stalking behavior;
retaliation following protected complaints;
requests for surveillance footage;
emergency lease termination due to safety concerns;
refusal to accept rent;
issuance of a 7-Day Notice to Quit; and
additional notices of intent to pursue legal remedies.

While no longer a resident, I was approached by a former Siegel Suites employee whom I had previously reported. I consider this contact to be a continuation of the pattern of unwanted interactions that caused me to leave the property.
Summary
The attached correspondence demonstrates that Siegel Suites received repeated written notice of my concerns regarding my safety, harassment, and retaliation. Despite those reports, I was ultimately forced to relocate.
The most recent encounter, occurring months after my relocation, has caused me renewed emotional distress and has reinforced my concerns regarding my personal safety.
Accordingly, this letter serves as my formal demand for compensation in the amount of $10,000, representing damages for:
Emotional distress;
Mental anguish;
Continuing harassment;
Alleged retaliation;
Loss of quiet enjoyment during my tenancy; and
Expenses and inconvenience associated with protecting my safety.
If this matter cannot be resolved, I intend to pursue all remedies available to me in the appropriate court.
I also demand that Siegel Suites preserve all evidence related to my tenancy and complaints, including:
Emails and internal communications;
Incident reports;
Surveillance footage;
Employee notes;
Complaint records;
Personnel records relating to employees involved in my complaints (to the extent required to be preserved by law); and
Any documents relating to the handling of my reports.
Nothing contained in this letter constitutes a waiver of any legal rights or remedies, all of which are expressly reserved.

Please accept this letter as my formal Notice of Intent to Sue arising from an incident that occurred on Friday, July 24, 2026, at one of your Circle K locations.
While attempting to make a routine purchase, a Circle K employee contacted law enforcement regarding me. When I asked the employee to explain why the police had been called, I was told it was because I was allegedly being "rude and disrespectful." I dispute that characterization and believe the employee's actions were unwarranted and humiliating.
I have been a loyal customer of this location and have spent approximately $5 to $20 per day there on a regular basis. As a frequent patron, I was shocked and embarrassed by the treatment I received. Being subjected to police involvement while attempting to make a lawful purchase caused me significant embarrassment, emotional distress, and damaged my trust in your business.
To the extent that false statements were made about me to justify contacting law enforcement, I believe those statements harmed my reputation and were inappropriate. I request that Circle K preserve all evidence related to this incident, including surveillance video, audio recordings, 911 recordings, dispatch records, point-of-sale records, employee reports, internal communications, and any other documents relating to the events of July 24, 2026.
As a result of this incident, I demand:
Compensation in the amount of $10,000 for the embarrassment, emotional distress, and other damages I allege resulted from this incident.
A full investigation into the conduct of the employee involved.
A written apology from Circle K.
Reimbursement of the money I have spent at this location as a loyal customer, as I no longer have confidence in conducting business there due to the treatment I received.
If this matter cannot be resolved promptly, I am prepared to pursue all legal remedies available to me in the appropriate court. Nothing in this correspondence should be construed as a waiver of any rights or claims I may have.

Dear Ms. Brown,
This letter serves as formal notice that I am terminating any prospective counseling relationship with you and will not be utilizing your services now or in the future.
I initially sought counseling to obtain support regarding the harassment and stalking that I reported experiencing. As reflected in our email correspondence, I informed you that I had experienced threatening events and increased anxiety and PTSD symptoms, and I requested an assessment appointment.
Since that time, I have become aware of information that has caused me significant concern. It is my understanding that I was characterized as suicidal or otherwise in need of a suicide-related welfare intervention, despite my position that I did not make any statement expressing suicidal intent. If that understanding is accurate, I believe such information is false and has caused me substantial emotional distress.
Accordingly, I demand that you and HELP of Southern Nevada:
Cease making or repeating any statements indicating that I expressed suicidal intent unless those statements are supported by accurate documentation.
Preserve all records, clinical notes, intake documentation, emails, telephone logs, electronic communications, referrals, and internal communications relating to me.
Provide a written explanation of the basis for any report or communication that characterized me as suicidal, if one exists.
Refrain from any further communication with me except for written correspondence responding to this letter or as otherwise required by law.
Because I have lost confidence in your ability to provide services objectively, I decline any future counseling services through you.
Nothing in this correspondence should be interpreted as waiving any legal rights or remedies that may be available to me. I expressly reserve all rights to pursue administrative complaints, professional licensing complaints, or other legal remedies should additional information demonstrate that false or misleading statements were made concerning my mental health.
Please consider this my formal request that all relevant records be preserved pending any future review or investigation.
I request that any future communications regarding this matter be made in writing.
