At 22, Zhigang Wang moved to Tokyo and worked as a chef in a hotel, where, he said, he learned the art of sushi. When he moved to Las Vegas, he held several cooking jobs in big casinos, including the Aladdin and Orleans. Wang said he started to specialize in cooking with a hibachi during an eight-year stint as a master chef at the Mirage.
